Strawberry Soup

This is a recipe that I have used for a long time. It’s a favorite. I usually put it in a cup and drink it like a smoothie. It’s fun to use it as it was original attended as soup too. Especially good with sandwiches or even as a dessert with meals. If you like to host tea parties this is a perfect dish. If your watching the waste line, well I think you will figure that one out when you read the ingredients. Last summer I hosted a potluck at our congregation and it was a big hit. I whipped up 10 gallons!



Chilled Strawberrry Soup

4 cups of frozen strawberries

1 ½ cup of milk (this can be adjusted to 2 cups if you like a little thinner)

1 cup of heavy cream

½ cup of sour cream

1 cup of sugar , or to taste (originally the recipe calls for 4 tablespoons)

Puree strawberries, milk, cream and sour cream in a blender or food processor until smooth. Stir in sugar to taste. Chill 8 hours or overnight in refrigerator before serving.
