Hamantaschen Cookies

Purim the Feast of Lots starts tonight. We have been reading the Megilia (book of Eshter) and other activities this week in school. I have never been a fan of fruit cookies. Until someone gave me this hamantaschen cookie. Yes, I have tried other hamantaschen and didn't care for them. This is absolutely delicious!


Ingredients:
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup butter or margarine
1 cup sugar
1 egg
2 tbsp orange juice
1 tsp. vanilla

Filling Ingredients:

1- 12 ounce ca of "Solo" poppy seed filling
6 tbsp. orange marmalade

Directions:

Cream butter, sugar, and egg. Sift flour, baking soda, and salt. Add sifted dry ingredients alternately with orange juice to the creamed batter. Add the vanilla.

Dough should start to form into a ball(add a little extra flour if dough appears too wet) Divide dough and shape into two flat balls. Wrap in wax paper and chill for several hours or overnight. On a lightly floured and sugared surface. (a little sugar helps move the flour better) Roll dough out to about 1/8 inch and cut into 2 inch rounds ( I use the clean filling can)

 Place 1 tsp. filling in the center of each round. Draw up sides to form a triangle. Place on greased cookie sheet and bake at 375* for 10 to 12 minutes or until lightly browned around the edges.
