My favorite Passover Recipe Snack

My favorite Passover snack is homemade granola. I have a few different recipes I like. It depend on how sweet I want it. Today was one of those days!

8 Cups rolled oats
1 1/2 cups flax seed
1 cup sunflower seeds
1 cup of slivered or chopped almonds
1 cup of pecans
1 1/2 tsp of kosher salt
1/2 cup brown sugar
1/4 cup maple syrup
3/4 cup honey
1 cup vegetable oil
1 tbs cinnamon
1 tbs vanilla extract
1 cup dried blueberries
1 cup dried cranberries or raisins

Preheat oven to 325* Line 2 baking sheets with parchment or aluminum foil.

Combine rolled oats, flax seed, sunflower seeds, almonds, and pecans in a large bowl. Mix dried fruit in a separate bowl and set aside. Stir together salt, brown sugar, honey, oil, cinnamon, and vanilla in a saucepan. Bring to a boil over medium heat. Stir while it is heating up. Pour the hot mixture over the dry ingredients. Stir to coat. Spread the mixture out evenly on the baking sheets.

Bake for 20 minutes. Stir once halfway through the cooking, Cool, for a few minutes then stir in your dried fruit. Let cool off before storing in an air tight container.

I like to eat it with milk/soy milk. My favorite way is dry as a snack.

**A few tips.
Put your vegetable oil in first that way the sticky stuff slides out.
Granola is great any way. I add whatever nuts or dried fruit I have on hand. Shredded coconut is yummy when I have it.
You can also add wheat germ, oat bran, sesame seeds.

Another granola recipe I make when I am feeling like eating healthier.

5 cups rolled oats
1 cup of slivered or chopped almonds

1 cup sesame seeds
1 cup flax seed
2 cups shredded coconut
1 cup sunflower seeds
1 cup canola oil
1 1/2 cup honey
1 cup raisins
1 cup cranberries or blueberries

The cooking directions are pretty much the same as the above recipe. 325* oven. Mix dry ingredients together, fruit in a bowl, and stir in all the other ingredients in a saucepan until it boils. Cool for 20 minutes. Let cool for a few minutes then add fruit.

That is my favorite Passover snack. Happy Passover. Time to get the rest of the house clean and get out the last remaining leaven ready to toss out before our Seder.
