Peanut Butter and Honey Protein Balls

I like to make these treats for myself when I know we are going to be busy and running all day. Living in a small town and having to go in town seems to be an all day event now. They help me with all the running around to keep up my energy and not to have to buy fast food.
Peanut Butter and Honey Protein Balls
Makes around 2 dozen
1-1/4 Cups of Rolled Oats
3 Tablespoons of Shredded Coconut
1/2 Cup of sliced Almonds Finely Chopped (Any nuts will do)
1 Tablespoon of Grounded Flax Seed (or Wheat Germ or Hemp Seeds Shelled)
1 Scoop of Whey Protein Powder
1/2 Cup of Honey
1/2 Cup of Dried Fruit Chopped in Small Bits
1/2 Cup of Peanut Butter
*Sometimes I add Mini Chocolate Chips
In a medium bowl add the oats, coconut, almonds, flax seed, and protein powder. Mix up ingredients well. Add the honey, fruit, and peanut butter and stir well.
Put the mixing bowl in the refrigerator for 20 to 30 minutes. Then roll into balls. When they are chilled they last for several days.
