Goat Cheese Spread with Lemon and Honey

I have been playing around with some honey recipes lately. Here is the latest which I tried. It's in, The Taste of Honey by Marie Simmons. It was delightful.
Goat Cheese Spread with Lemon and Honey
8 ounces of goat cheese
4 Tablespoons of honey
3 Tablespoons of plain low-fat Greek yogurt
2 Tablespoons extra virgin olive oil
1 Teaspoon grated lemon zest
1 small garlic clove
1/2 Teaspoon of black pepper
1/4 Teaspoon of coarse salt
Optional-1 Teaspoon fresh thyme, oregano sage, lavender or other herbs in the honey
Place goat cheese in food processor and add 2 TBSP of honey, yogurt, olive oil, 1/2 TSP of lemon zest, 1/8 black pepper, and the salt. Pulse until creamy and blended well. Transfer to a small serving bowl.
Sprinkle the spread with the remaining 1/2 TSP lemon zest and 1/8 TSP black pepper. Drizzle remaining 2 TBSP of honey and the optional herbs.
This goes great with crackers and veggies.
Great for a party appetizer.
