My Thoughts:
Having friends who have food tolerance can be difficult especially if you
are one who tends to have a houseful of friends often on the weekend. Now I
find I have to keep in mind what I’m serving and to be aware to inform them of
the ingredients. I also enjoy making sure the kids aren’t left out because of
food. I also like quick and easy recipes.
The first chapter goes over the different types of dairy free from milk allergy,
lactose intolerance, food sensitivity, and some general health benefits of a
diary free lifestyle.
It also educates you in understanding labels. I honestly didn’t know that
nondairy doesn’t mean diary free.
Like all of Callisto Cookbooks they go beyond your basic cookbook and break
down things like suggested tools for the particular cookbook. The cookbook
provides a nice selection on dairy free and milk alternatives.
Chapter Two gives you recipes for the many different types of nut milks,
whipped cream, butter, and cheeses. The chapters are broken down by smoothies
and breakfast, soups and salads, snacks and sides, vegetarian mains, meats and
fish, desserts, and sauces and dressings.
Wow is all I can say I am impressed by the variety of dishes. There is no
lacking in flavors in each section. There is ranch dressings, waffles, mashed
potatoes, stuffed chicken, cup cakes, and so much more with 101 recipes.
A downside of the recipes: Talking with a friend who has several children
who are have an allergy to diary she pointed out that several of the recipes
would be out of her budget due to the cost of dairy free cheeses, some of the
alternatives, and cashew milk. The nuts
especially cashews and pine nuts used to
make the dairy free cheeses. A lot of the recipes have diary free cheese,
butter, cashew milk, sour cream. Some are store bought diary free products and
other recipes use the cheese recipe in this cookbook. She saves certain recipes
for special occasions due to the cost.
With that in mind I looked over the recipes keeping the cost in mind. I can
see it when you have a cup of this and that of the specialty products. This may
not be an issue for your family. Just a heads up if it is something you need to
consider.
Overall this is a nice cookbook with a wonderful variety for everyone’s
taste. The recipes are meant for someone who has a busy life so you don’t have
to spend hours in the kitchen.
